INGREDIENTS
5 oz Chicken Breast (skinless, boneless)
1/2 medium Sweet Potato
1 tsp Extra Virgin Olive Oil
1/2 tsp Ground Cinnamon
Salt & Pepper to taste
PREPARATION
Preheat your oven to 425°F.
Cut the sweet potato into bite-sized cubes. In a bowl, toss the sweet potato cubes with 1 tsp of extra virgin olive oil, 1/2 tsp of ground cinnamon, and a pinch of salt and pepper.
Spread the seasoned sweet potato cubes evenly on a baking tray lined with parchment paper.
Season the chicken breast lightly with salt and pepper. Place the chicken breast on a separate baking tray or in a baking dish.
Put both trays in the oven. Roast the sweet potatoes for about 25 minutes until tender and slightly caramelized. Roast the chicken for about 20-25 minutes, or until the internal temperature reaches 165°F and the edges become slightly crispy. For extra crispiness, you can broil the chicken for the last 2-3 minutes.
Remove both trays from the oven. Let the chicken rest for a few minutes before slicing.
Plate a portion of the roasted sweet potatoes alongside the chicken. Enjoy your meal while it's warm!
