INGREDIENTS
7 ounces Salmon Fillet
1 cup Green Beans
1 cup Cauliflower
1.5 teaspoons Olive Oil
1 clove Garlic
1 tablespoon Lemon Juice
PREPARATION
Pat the salmon fillet dry with a paper towel and season with salt and pepper on both sides.
Heat a non-stick skillet over medium-high heat and add 1 teaspoon of olive oil. Once shimmering, add the salmon fillet skin-side down and sear for about 3-4 minutes until the skin is crispy.
Flip the salmon and sear for an additional 3-4 minutes until it reaches your desired doneness. Remove from the pan and set aside.
Steam the green beans in a steamer basket over boiling water for about 4-5 minutes until tender-crisp. Season with a pinch of salt if desired.
Meanwhile, chop the cauliflower into florets and steam until very tender, about 8-10 minutes.
In a food processor or with a fork, blend or mash the steamed cauliflower with the garlic, 0.5 teaspoon of olive oil, and lemon juice until smooth and creamy. Adjust seasoning with salt and pepper.
Plate the seared salmon alongside a serving of green beans and a generous dollop of cauliflower mash. Garnish with a drizzle of extra lemon juice if desired and serve immediately.
