INGREDIENTS
200g Extra Firm Tofu
75g Shelled Edamame
1 cup chopped Broccoli
1/2 medium Red Bell Pepper
1 small Carrot
1 tbsp Sesame Seeds
1 tbsp Low Sodium Soy Sauce
1 tsp Olive Oil
2 cloves Garlic
1 tsp minced Ginger
1 tsp Cornstarch
PREPARATION
Press the tofu gently to remove excess moisture, then cut it into 1-inch cubes. Toss the tofu cubes with cornstarch until evenly coated.
Heat olive oil in a non-stick pan over medium-high heat. Add the tofu cubes and stir-fry until they become golden and crispy on all sides. Remove tofu and set aside.
In the same pan, add minced garlic and ginger. Sauté briefly until fragrant.
Add the chopped broccoli, sliced red bell pepper, and julienned carrot. Stir-fry the vegetables until tender-crisp, about 4-5 minutes.
Return the crispy tofu to the pan and drizzle with low sodium soy sauce. Toss well to combine all flavors.
Finish by sprinkling toasted sesame seeds over the stir-fry. Serve warm and enjoy the medley of textures and flavors.
