INGREDIENTS
6.5 ounces Salmon Fillet (184g)
1.5 cups Green Beans (187g)
1 cup Cauliflower Mash (107g)
1 tsp Olive Oil (for salmon)
1 tsp Olive Oil (for green beans)
2 cloves Garlic, minced
Pinch Salt
Pinch Black Pepper
1 Lemon Wedge
PREPARATION
Pat the salmon fillet dry and season with a pinch of salt and black pepper.
Heat 1 teaspoon of olive oil in a non-stick skillet over medium-high heat.
Place the salmon fillet in the skillet skin-side down, and sear for about 3-4 minutes. Flip and cook for an additional 3-4 minutes until the salmon is just cooked through.
In a separate pan, heat the remaining teaspoon of olive oil over medium heat. Add minced garlic and sauté until fragrant, then add the green beans and sauté until tender-crisp, about 5 minutes. Season lightly with salt and pepper.
For the cauliflower mash, steam or boil cauliflower florets until tender. Drain and mash with a fork or blend until smooth. Season with salt and pepper to taste.
Plate the seared salmon alongside a generous serving of garlic green beans and a scoop of cauliflower mash. Squeeze the lemon wedge over the salmon for a bright finish and serve immediately.
