7 oz Salmon Fillet
1 cup Asparagus
1 cup Cauliflower
1 tbsp Olive Oil
1 clove Garlic
PREPARATION
Pat the salmon fillet dry and season lightly with salt and pepper.
Heat a skillet over medium-high heat and add 1 tablespoon of olive oil. Once hot, place the salmon fillet skin-side down and sear for about 3-4 minutes, then flip and cook for another 3-4 minutes until just cooked through.
While the salmon is searing, trim the asparagus and steam it in a steamer or over a small amount of boiling water until tender, about 4-5 minutes.
For the mashed cauliflower, steam the cauliflower florets and garlic clove together until very tender, about 8-10 minutes. Transfer the steamed cauliflower and garlic to a bowl and mash until smooth, drizzling in any remaining olive oil and seasoning with salt and pepper to taste.
