INGREDIENTS
6 oz Chicken Breast (170g)
1 medium Carrot (61g)
2 stalks Celery (80g)
1 medium Onion (70g)
2 cloves Garlic (6g)
0.5 cup Diced Tomatoes (123g)
1 cup Spinach (30g)
2 cups Low-Sodium Chicken Broth (480g)
2 sprigs Fresh Thyme
1 Bay Leaf
Salt and Pepper to taste
PREPARATION
Prepare the vegetables by dicing the carrot, celery, and onion. Mince the garlic.
Cut the chicken breast into bite-sized pieces.
In a large pot, lightly sauté the diced onion, carrot, and celery in a small splash of water or broth until they begin to soften, about 3-4 minutes.
Add the minced garlic and sauté for another minute.
Pour in the low-sodium chicken broth and add the diced tomatoes.
Add the chicken pieces, bay leaf, and fresh thyme to the pot.
Bring the mixture to a gentle simmer and cook for about 10-12 minutes or until the chicken is fully cooked and the vegetables are tender.
In the last 2 minutes of cooking, stir in the spinach until just wilted.
Season with salt and pepper to taste, remove the bay leaf and thyme sprigs before serving, and enjoy your comforting bowl of soup.
