INGREDIENTS
6 oz Salmon Fillet
1 cup Green Beans
1 Garlic Clove
1 cup Cauliflower, chopped
1/4 cup Unsweetened Almond Milk
1 tsp Olive Oil
Salt & Pepper to taste
PREPARATION
Pat the salmon fillet dry and season with salt and pepper on both sides.
Heat a non-stick skillet over medium-high heat and add half the olive oil. Once hot, place the salmon fillet skin-side down (if applicable) and sear for about 3-4 minutes until a crispy crust forms. Flip and cook for another 3-4 minutes until cooked through. Remove salmon and set aside.
In the same skillet, add the remaining olive oil and add the minced garlic from the garlic clove. Sauté for 30 seconds until fragrant.
Add the green beans to the skillet with a pinch of salt and sauté for about 4-5 minutes until they are tender-crisp.
While the green beans are cooking, steam the cauliflower until very tender, about 8-10 minutes. Transfer the steamed cauliflower to a blender, add the unsweetened almond milk, a pinch of salt, and blend until smooth and creamy.
Plate the salmon fillet alongside a serving of garlic green beans and a generous scoop of cauliflower mash. Enjoy your balanced, high-protein, low-carb dinner!
