INGREDIENTS
5.5 oz Salmon Fillet (156g)
1.5 cups Brussels Sprouts (150g)
1/2 cup Cooked Brown Rice (100g)
1 Tbsp Olive Oil
Salt & Pepper to taste
PREPARATION
Preheat your oven to 425°F.
Trim and halve the Brussels sprouts. Toss them with olive oil, salt, and pepper.
Spread the Brussels sprouts on a baking sheet and roast in the oven for about 20-25 minutes until they are tender and slightly crispy, stirring halfway through.
While the Brussels sprouts roast, season the salmon fillet on both sides with salt and pepper.
Heat a non-stick skillet over medium-high heat. Once hot, add the salmon fillet skin-side down (if applicable) and sear for about 3-4 minutes until a crust forms.
Flip the salmon and cook for another 3-4 minutes until the salmon is just cooked through.
Heat the cooked brown rice if needed and plate alongside the salmon and roasted Brussels sprouts.
Serve immediately and enjoy your balanced, nutrient-dense dinner.
