PREPARATION
Begin by preheating a skillet over medium-high heat. Pat the turkey breast dry and season both sides lightly with salt and pepper.
Add half of the olive oil to the skillet. Once hot, sear the turkey breast for about 3-4 minutes per side until a golden crust forms and the internal temperature reaches 165°F. Remove from the pan and let rest.
While the turkey is resting, peel and boil the sweet potato until tender. Once soft, mash lightly with a fork. Optionally, season with a pinch of salt.
