INGREDIENTS
3 jumbo pasta shells (~90g)
1 cup fresh spinach (~30g)
0.67 cup low-fat ricotta (~150g)
0.5 cup marinara sauce (~125g)
1 clove garlic (~3g)
1 tsp olive oil (~5g)
PREPARATION
Preheat your oven to 375°F (190°C).
Bring a large pot of salted water to a boil and cook the jumbo pasta shells according to package instructions until al dente. Drain and set aside.
In a small skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
In a mixing bowl, combine the low-fat ricotta, fresh spinach, and sautéed garlic. Mix until evenly incorporated.
Lightly fill each cooked shell with the ricotta and spinach mixture.
Spread a thin layer of marinara sauce on the bottom of an oven-safe baking dish. Place the stuffed shells in the dish and pour the remaining marinara sauce over the top.
Cover the dish with foil and bake in the preheated oven for 20 minutes, or until heated through.
Remove from the oven and let cool slightly before serving.
