Enjoy a light yet satisfying dinner featuring a perfectly seared salmon fillet paired with tender, roasted broccoli and nutty quinoa. The dish is finished with a splash of lemon and a whisper of garlic for a burst of freshness that complements the rich flavors of the salmon.
INGREDIENTS
5.5 oz Salmon Fillet
1/2 cup Cooked Quinoa
1 cup Broccoli
1/2 tsp Extra Virgin Olive Oil
1 tbsp Lemon Juice
1/2 tsp Garlic Powder
Salt and Pepper to taste
PREPARATION
Preheat your oven to 425°F for roasting the broccoli.
Rinse and pat dry the salmon fillet. Season both sides with salt, pepper, and garlic powder.
Heat a non-stick skillet over medium-high heat. Once hot, lightly drizzle 0.5 tsp of olive oil. Sear the salmon, skin-side down if applicable, for about 3-4 minutes until golden.
Carefully flip the salmon and cook for another 3-4 minutes or until the salmon reaches your desired doneness.
While the salmon is searing, toss the broccoli florets with a little bit of salt, pepper, and a squeeze of lemon juice. Spread them on a baking sheet.
Roast the broccoli in the preheated oven for about 10-12 minutes until tender and lightly charred.
Warm the pre-cooked quinoa if needed and season with a pinch of salt and a drizzle of lemon juice.
Plate the quinoa, top with the seared salmon, and arrange the roasted broccoli on the side. Garnish with an additional squeeze of lemon if desired and serve immediately.
