INGREDIENTS
5 oz Chicken Breast (141g)
1 cup Brussels Sprouts (88g)
1 tbsp Olive Oil (13.5g)
1 tbsp Balsamic Vinegar (16g)
1 tsp Honey (7g)
1 clove Garlic
Salt & Pepper to taste
PREPARATION
Preheat your oven to 425°F.
Trim and halve the Brussels sprouts, then toss them in a bowl with olive oil, salt, and pepper.
Spread the Brussels sprouts in a single layer on a baking sheet and roast in the oven for about 20 minutes, or until crispy and tender, shaking the pan halfway through.
Season the chicken breast with salt and pepper. In a skillet over medium-high heat, add a tiny drizzle of olive oil to sear the chicken for about 2-3 minutes on each side until golden.
Reduce heat to medium and add minced garlic to the skillet, cooking briefly until fragrant.
In the same pan, combine balsamic vinegar and honey. Allow the mixture to simmer and reduce slightly, glazing the chicken by turning it in the sauce until it is well coated and cooked through (internal temperature of 165°F).
Plate the glazed chicken alongside the roasted Brussels sprouts and drizzle any extra balsamic glaze over the top, if desired.
