6 oz Salmon Fillet
1 cup Asparagus
1 cup Cauliflower
1/2 tbsp Olive Oil
1 Garlic clove
1 tbsp Unsweetened Almond Milk
Salt and Pepper to taste
PREPARATION
Preheat your oven to 425°F. Line a baking sheet with parchment paper.
Toss the asparagus with half of the olive oil, and season with a pinch of salt and pepper. Spread them evenly on the prepared baking sheet.
Roast the asparagus in the oven for 12-15 minutes until tender and slightly crisp.
While the asparagus roasts, season the 6 oz salmon fillet with salt and pepper on both sides.
Heat a non-stick skillet over medium-high heat. Add the remaining olive oil and sear the salmon for about 3-4 minutes per side, or until the flesh is opaque and flakes easily.
