Dice the half-medium sweet potato into 1/2-inch cubes, toss with olive oil, salt, and pepper, and spread on a baking sheet.
Roast the sweet potato cubes for 20-25 minutes, stirring halfway, until tender and slightly caramelized.
While the sweet potatoes roast, slice the lean turkey sausage into rounds.
In a non-stick skillet over medium heat, add the turkey sausage slices and cook for 3-4 minutes until they begin to brown.
Beat the eggs in a bowl with a pinch of salt and pepper.
Once the sausage is nicely browned, add the beaten eggs to the skillet and gently scramble until just set.
Warm the whole wheat tortilla in a separate pan or microwave for 20 seconds to make it pliable.
Assemble the burrito by placing the scrambled eggs and turkey sausage on the tortilla. Optionally, add a few roasted sweet potato cubes inside or serve them on the side.
Fold the tortilla, slice in half, and serve immediately along with the remaining roasted sweet potatoes.
