Preheat your grill or grill pan over medium-high heat.
Season the chicken breast with your choice of salt, pepper, and herbs. Optionally, add a squeeze of lemon.
Grill the chicken breast for about 6-7 minutes per side, or until the internal temperature reaches 165°F. Once cooked, cover and allow it to rest.
While the chicken is grilling, preheat your oven to 425°F for the broccoli.
Toss the broccoli with olive oil, a pinch of salt, and pepper. Spread evenly on a baking sheet.
Roast the broccoli in the oven for about 15-20 minutes, until tender and slightly crispy on the edges.
Prepare quinoa as per package instructions if not already cooked.
Assemble your plate by placing the quinoa as a base, topping it with sliced grilled chicken breast and roasted broccoli. Serve warm.
