INGREDIENTS
200g Extra-Firm Tofu
155g Shelled Edamame (1 cup)
1 cup Broccoli Florets
1 medium Red Bell Pepper
1 medium Carrot
1 tsp Sesame Oil
1 tbsp Low-Sodium Soy Sauce
1 tsp Rice Vinegar
1 clove Fresh Garlic, minced
1 tsp Fresh Ginger, minced
1 tsp Sesame Seeds
PREPARATION
Press the tofu for at least 15 minutes to remove excess water, then cut it into bite-sized cubes.
In a non-stick pan, heat the sesame oil over medium heat. Add the tofu cubes and sauté until they turn crispy and golden on all sides, about 8-10 minutes.
While the tofu is cooking, prepare the vegetables. Chop broccoli into florets, slice the red bell pepper into strips, and julienne the carrot.
Add minced garlic and ginger to the pan during the last 2 minutes of tofu cooking to infuse flavor without burning.
In a large wok or skillet over medium-high heat, combine the edamame, broccoli, red bell pepper, and carrot. Stir-fry the vegetables for about 3-4 minutes until slightly tender but still vibrant.
Return the crispy tofu to the wok with the vegetables. Drizzle in the low-sodium soy sauce and rice vinegar, tossing gently to combine all ingredients evenly.
Finish by sprinkling sesame seeds over the stir-fry. Cook for an additional minute to meld the flavors, then remove from heat.
Serve immediately and enjoy a burst of crunchy, savory, and fresh flavors!
