2 large Whole Eggs
3 Egg Whites
1 cup Fresh Spinach

1 tsp Olive Oil
PREPARATION
Slice the lean chorizo into small rounds or crumble it if in a casing.
Heat a non-stick skillet over medium heat and add the chorizo. Sauté for 3-4 minutes until it starts to render fat and becomes slightly crispy.
Remove the chorizo from the pan and set aside. Wipe the skillet if needed.
