This dish is accented with fresh spinach and a dash of olive oil, making it both satisfying for dinner or any meal throughout the day.
INGREDIENTS
5 oz Chicken Breast
50 g Whole Wheat Pasta (dry)
2 cloves Garlic
1 oz Low-Fat Cream Cheese
1 cup Baby Spinach
1/2 cup Low Sodium Chicken Broth
1 tsp Olive Oil
Salt & Pepper to taste
PREPARATION
Bring a pot of water to a boil and cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
Season the chicken breast lightly with salt and pepper. In a non-stick skillet, heat the olive oil over medium heat and cook the chicken for about 5-6 minutes per side until fully cooked and golden brown. Remove and slice into strips.
In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
Add the low sodium chicken broth and bring to a simmer. Stir in the low-fat cream cheese until it melts, forming a light creamy sauce.
Mix in the cooked pasta and baby spinach. Toss to combine and allow the spinach to wilt slightly. Adjust seasoning with salt and pepper if needed.
Top with sliced chicken breast and serve warm.
