Lightly toss the gnocchi with half of the olive oil, salt, and pepper. Place the gnocchi in the air fryer basket and cook for 10-12 minutes until they’re crispy and golden on the outside, shaking halfway through.
While the gnocchi cooks, toss the cherry tomatoes with a drizzle of olive oil, salt, and pepper, then roast them in a skillet over medium heat for about 5-7 minutes until they start to burst and soften.
