INGREDIENTS
5.5 oz Chicken Breast (156g)
1 oz Part-Skim Mozzarella Cheese (28g)
1/4 cup Fresh Spinach (7g)
1 Garlic Clove, minced (3g)
1/2 tsp Dried Italian Herbs
1/2 tsp Olive Oil Cooking Spray
Salt & Pepper to taste
PREPARATION
Preheat your oven to 400°F (200°C).
Using a sharp knife, create a pocket in the thickest part of the chicken breast by slicing horizontally, being careful not to cut all the way through.
In a small bowl, mix the minced garlic, fresh spinach, and part-skim mozzarella. Season with dried Italian herbs, salt, and pepper.
Stuff the chicken breast pocket with the garlic herb mixture, pressing gently so it fills evenly.
Lightly spray the outside of the chicken with olive oil cooking spray and season with additional salt and pepper if desired.
Place the stuffed chicken on a baking sheet lined with parchment paper.
Bake in the preheated oven for 20-25 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
Once baked, let the chicken rest for a few minutes before slicing and serving.
