3 large Eggs
1 large Egg White (33g)
1 Turkey Sausage Link (55g)
1/2 medium Red Bell Pepper (75g)
1 cup Spinach (30g)
1/4 cup chopped Onion (40g)
1 tsp Olive Oil (5g)
Salt & Pepper to taste
PREPARATION
Preheat a large non-stick skillet over medium heat and add the olive oil.
Peel and dice the sweet potato into small cubes. Add them to the skillet and sauté for about 8-10 minutes until they start to become tender and slightly crispy.
Dice the red bell pepper and chop the onion. Add them to the skillet with the sweet potatoes, and continue cooking for an additional 3-5 minutes until the veggies are softened.
Slice the turkey sausage into rounds and add to the pan, cooking until lightly browned.
Lower the heat slightly, and create small wells in the hash for the eggs. Crack the whole eggs into the wells and add the egg white to one of the wells. Cover the skillet and allow the eggs to cook to your desired level of doneness (about 3-4 minutes for runny yolks).
During the final minute of cooking, toss in the spinach so it wilts slightly.
