INGREDIENTS
4 oz Lean Ground Beef (90/10)
1 medium Sweet Potato
1 large Whole Egg
1/2 cup Egg Whites
1/2 medium Red Bell Pepper
1/4 medium Yellow Onion
1 tsp Olive Oil
1/2 tsp Garlic Powder
Salt & Pepper to taste
PREPARATION
Peel and dice the sweet potato into small cubes and dice the red bell pepper and yellow onion.
Heat olive oil in a large skillet over medium heat. Add the diced onion and sauté until translucent.
Add the diced sweet potato to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the sweet potato starts to soften.
Add the lean ground beef to the skillet. Break it up with a spoon and cook until it is browned and cooked through. Season with garlic powder, salt, and pepper.
Mix in the diced red bell pepper and cook for an additional 2-3 minutes until softened.
In a small bowl, whisk together the whole egg and egg whites. Pour the egg mixture over the hash. Gently stir to combine, allowing the eggs to set and bind the ingredients.
Cook for another 2-3 minutes until the egg is fully cooked. Adjust seasonings if needed and serve hot.
