INGREDIENTS
5 oz Chicken Breast (142g)
1/2 medium Red Bell Pepper (75g)
1/2 cup sliced Zucchini (90g)
1 medium Red Onion (110g)
1 tablespoon Olive Oil
1 teaspoon Chili Powder
1 teaspoon Smoked Paprika
1 teaspoon Garlic Powder
1 tablespoon Lime Juice
Salt & Pepper to taste
PREPARATION
Preheat your oven to 425°F.
In a small bowl, combine chili powder, smoked paprika, garlic powder, and a pinch of salt and pepper. Stir in the lime juice to form a spicy marinade.
Pat the chicken breast dry and brush half of the marinade evenly on both sides.
On a baking sheet, toss the sliced red bell pepper, zucchini, and red onion with olive oil and a little salt and pepper.
Place the chicken breast among the vegetables on the baking sheet.
Roast in the oven for about 20-25 minutes or until the chicken reaches an internal temperature of 165°F and the vegetables are tender and lightly charred.
Remove from the oven, spoon any remaining marinade over the chicken if desired, and let the dish rest for a few minutes before serving.
