INGREDIENTS
6 oz Chicken Breast
1 medium White Potato
1 Garlic Clove
0.5 tsp Olive Oil
0.25 cup Unsweetened Almond Milk
0.5 tsp Butter
1 tbsp Fresh Herbs (Rosemary & Thyme)
Salt and Pepper to taste
PREPARATION
Preheat your oven to 400°F (200°C).
Pat the chicken breast dry, then rub with salt, pepper, and fresh herbs. Drizzle with olive oil to coat evenly.
Place the seasoned chicken breast on a baking sheet and roast in the oven for 20-25 minutes or until the internal temperature reaches 165°F (74°C).
While the chicken is roasting, peel and chop the white potato into cubes.
Boil potato cubes in lightly salted water until tender, about 15 minutes.
Drain the potatoes and return them to the pot. Add the garlic clove (crushed), unsweetened almond milk, butter, and a pinch of salt and pepper.
Mash the potatoes until smooth and creamy. Stir in any remaining herbs if desired.
Slice the roasted chicken and serve alongside a generous helping of creamy garlic mashed potatoes.
