INGREDIENTS
5 ounces Salmon Fillet
1 medium Sweet Potato
1 teaspoon Unsalted Butter
2 teaspoons Olive Oil (for Mash)
2 cups Baby Spinach
2 teaspoons Olive Oil (for Spinach)
1 clove Garlic
PREPARATION
Preheat a non-stick skillet over medium-high heat. Pat the 5-ounce salmon fillet dry and season lightly with salt and pepper.
Heat 1 teaspoon of olive oil (from the spinach olive oil allocation) in the skillet. Once hot, sear the salmon skin-side down for about 4 minutes, then flip and cook for another 3-4 minutes until the interior is just opaque.
Meanwhile, pierce the sweet potato and microwave it until tender (about 5-7 minutes) or bake it in a preheated oven at 400°F for 30-35 minutes. Once cooked, scoop out the flesh and place in a bowl.
Mash the sweet potato flesh with 1 teaspoon of unsalted butter and 2 teaspoons of olive oil (for the mash). Season with a pinch of salt and pepper until smooth.
In a separate pan, heat 2 teaspoons of olive oil over medium heat. Add the minced garlic and sauté for 30 seconds until fragrant. Add 2 cups of baby spinach and sauté until just wilted, about 2 minutes. Season with a little salt if desired.
Plate the salmon alongside a generous serving of sweet potato mash and a pile of garlic sautéed spinach. Serve immediately and enjoy your balanced and nourishing dinner!
