INGREDIENTS
5 oz Chicken Breast (approx 140g)
1 medium Fresh Tomato (approx 123g)
1/4 cup Fresh Basil, chopped
2 oz Low Moisture Part-Skim Mozzarella Cheese (approx 56g)
2 tsp Extra Virgin Olive Oil
Salt and Pepper to taste
PREPARATION
Preheat your oven to 375°F (190°C) and lightly grease a baking dish with a small amount of olive oil.
Season the chicken breast on both sides with salt, pepper, and a pinch of garlic powder if desired.
Place the chicken breast in the baking dish and drizzle 1 teaspoon of extra virgin olive oil over it.
Bake the chicken for about 20-25 minutes, or until the internal temperature reaches 165°F (74°C).
While the chicken is finishing baking, slice the fresh tomato into rounds.
Once the chicken is nearly done, remove the dish from the oven. Top the chicken with tomato slices, sprinkle with fresh basil, and evenly distribute the mozzarella cheese over the top.
Drizzle the remaining 1 teaspoon of olive oil over the assembled dish and return it to the oven for an additional 5 minutes, or until the cheese is melty and slightly golden.
Remove from the oven and let it rest for a couple of minutes before serving to allow the flavors to meld together.
