PREPARATION
Preheat your oven to 400°F (200°C).
Prepare the tri-tip by patting it dry. Finely mince the garlic and roughly chop the rosemary and thyme. Mix the garlic and herbs with a pinch of salt and pepper.
Rub the herb mixture evenly over the tri-tip roast.
Place the tri-tip on a roasting pan. Roast in the preheated oven for about 20-25 minutes or until the internal temperature reaches your preferred level of doneness.
While the meat is roasting, trim and halve the Brussels sprouts. Toss them in a bowl with olive oil, salt, and pepper.
