1 cup Asparagus
2 cups Cauliflower
1 tbsp Extra Virgin Olive Oil

Rinse the salmon fillet and pat dry with paper towels. Season both sides with salt and pepper.
Heat a non-stick skillet over medium-high heat. Add half of the olive oil and when shimmering, place the salmon skin-side down. Sear for about 3-4 minutes until the skin is crispy, then flip and cook for another 3-4 minutes until just cooked through.
While the salmon cooks, steam the asparagus in a steamer basket over simmering water for about 4-5 minutes until tender but still crisp.
For the cauliflower mash, chop the cauliflower into florets and steam or boil until very tender, about 8-10 minutes. Drain well.
Place the cooked cauliflower in a blender or use a hand masher. Add the remaining olive oil, a pinch of salt and pepper, and blend or mash until smooth and creamy.
