INGREDIENTS
6.5 ounces Salmon Fillet
100 grams Asparagus
1 cup Cauliflower
3 cloves Garlic
1 teaspoon Olive Oil
Salt and Pepper to taste
1 teaspoon Lemon Juice
PREPARATION
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat a non-stick skillet over medium-high heat with the olive oil. Once hot, sear the salmon, skin-side down first if applicable, for about 3-4 minutes until a nice crust forms, then flip and cook for another 3-4 minutes depending on thickness.
While the salmon cooks, steam the asparagus in a steamer basket over boiling water for about 4-5 minutes until tender crisp.
For the garlic cauliflower mash, roughly chop the cauliflower and steam or boil until soft (about 8-10 minutes). In a small pan, sauté minced garlic (from about 3 cloves) lightly in a few drops of olive oil until fragrant. Add the garlic to the softened cauliflower.
Using a blender or immersion blender, combine the cauliflower and garlic until smooth. Season with salt, pepper, and lemon juice to taste.
Plate the seared salmon with a side of steamed asparagus and a generous scoop of garlic cauliflower mash. Serve immediately.
