1.5 tbsp Extra Virgin Olive Oil
1 cup Asparagus Spears
1 cup Cauliflower
2 tbsp Plain Nonfat Greek Yogurt
1 clove Garlic
Salt & Pepper to taste
PREPARATION
Pat the salmon fillet dry and season with salt and pepper.
Heat 1.5 tablespoons of extra virgin olive oil in a skillet over medium-high heat.
Sear the salmon fillet for about 3-4 minutes per side, or until it reaches your desired doneness.
Meanwhile, steam the asparagus in a steamer basket or microwave until tender, about 4-5 minutes.
In a small pot, bring cauliflower and a little water to a simmer until tender, about 8-10 minutes.
Drain the cauliflower and blend it with minced garlic, 2 tablespoons of Greek yogurt, a pinch of salt and pepper until smooth and creamy.
Plate the seared salmon with a side of steamed asparagus and a serving of cauliflower mash.
Drizzle any remaining olive oil over the vegetables and serve immediately.
