INGREDIENTS
8 oz Shrimp, peeled and deveined (~227g)
2 tbsp Extra Virgin Olive Oil
3 cups Baby Spinach (~90g)
2 cloves Garlic
1 tbsp Lemon Juice
Salt and Black Pepper to taste
PREPARATION
Pat the shrimp dry with paper towels and season lightly with salt and black pepper.
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
Add the garlic (minced) to the skillet and sauté for about 30 seconds until fragrant.
Place the shrimp in the skillet in a single layer and cook for 2-3 minutes on each side until pink and opaque.
Transfer the shrimp to a plate and set aside.
In the same skillet, add the remaining tablespoon of olive oil followed by the baby spinach. Sauté for 2 minutes until the spinach wilts, stirring frequently.
Return the shrimp to the skillet, drizzle with lemon juice, and gently toss to combine everything.
Taste and adjust seasoning with additional salt and pepper if needed, then serve immediately.
