INGREDIENTS
5.5 oz Salmon Fillet
1/2 cup cooked Brown Rice
1 cup Asparagus
1 tsp Olive Oil
2 tbsp Nonfat Greek Yogurt
1 tbsp Lemon Juice
1 Garlic clove
Salt and Pepper to taste
PREPARATION
Pat dry the salmon fillet and season both sides with salt and pepper.
Heat a nonstick skillet over medium-high heat and add the olive oil.
Place the salmon in the skillet, skin-side down if applicable, and sear for about 3-4 minutes until a golden crust forms.
Flip the salmon and sear for an additional 3-4 minutes until the fish is cooked through but still moist. Transfer to a plate and keep warm.
In the same skillet, add chopped garlic and sauté for 30 seconds. Add the asparagus and cook for about 4-5 minutes until tender-crisp, stirring occasionally.
While the asparagus cooks, prepare the sauce by mixing the nonfat Greek yogurt, lemon juice, a pinch of salt, and pepper in a small bowl.
Arrange a serving of brown rice on your plate, top with steamed asparagus, and gently place the salmon fillet beside them.
Drizzle the yogurt lemon garlic sauce over the salmon and asparagus, and serve immediately.
