PREPARATION
Preheat the oven to 400°F (200°C). Toss the medium potato, cut into chunks, with half a teaspoon of olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until golden and tender.
In the meantime, gently heat the remaining olive oil in a large pan over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds to 1 minute.
