INGREDIENTS
6 oz Lean Beef Sirloin
1 cup Bell Peppers (sliced)
1 cup Cauliflower Rice
1 tbsp Low-Sodium Soy Sauce
2 tsp Sesame Oil
1/4 Avocado
2 cloves Garlic
1 tsp Ginger
PREPARATION
Thinly slice the lean beef sirloin against the grain.
Cut the bell peppers into strips and set aside. Prepare the cauliflower rice if not pre-made.
Mince the garlic and grate the ginger.
Heat 1 tsp of sesame oil in a non-stick skillet or wok over medium-high heat.
Add the sliced beef and stir-fry until browned on all sides, about 3-4 minutes. Remove the beef from the skillet and set aside.
In the same skillet, add the remaining sesame oil, minced garlic, and grated ginger. Sauté for about 30 seconds until fragrant.
Add the bell pepper strips and stir-fry for 2-3 minutes until slightly softened but still crisp.
Mix in the cauliflower rice and low-sodium soy sauce, stirring well to combine. Let it cook for another 2 minutes until heated through.
Return the beef to the skillet and mix for another minute until all ingredients are well incorporated.
Plate the stir-fry and top with sliced or diced avocado for a creamy finish.
