INGREDIENTS
4.5 oz Steak (128g)
100g Baby Potatoes
100g Fresh Green Beans
1 tbsp Unsalted Butter
2 Garlic Cloves
2 tsp Olive Oil
Pinch of Salt
Pinch of Black Pepper
PREPARATION
Preheat your oven to 425°F. Rinse baby potatoes and cut them in halves if large. Toss them with 1 tsp olive oil, a pinch of salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until crispy and golden.
While potatoes are roasting, trim the ends of the green beans. Blanch them in boiling water for 2-3 minutes, then shock in ice water to retain their bright color. Drain and set aside.
Season the steak generously with salt and pepper on both sides.
Heat a skillet over medium-high heat and add the remaining 1 tsp olive oil. Once hot, add the steak and sear for about 3-4 minutes per side for medium-rare (adjust time as per your preferred doneness).
In the last minute of cooking, add the butter and crushed garlic cloves to the skillet. Tilt the pan slightly and spoon the melted garlic butter over the steak continuously.
Remove the steak from the skillet and let it rest for a couple of minutes. Meanwhile, quickly toss the blanched green beans in the pan with the garlic butter for added flavor, cooking just for 1-2 minutes.
Slice the steak and plate alongside the crispy roasted potatoes and garlic-sautéed green beans. Serve warm and enjoy!
