Savor tender roasted pork tenderloin glazed in a sticky blend of honey, soy, and aromatic spices. This dish is paired with a side of roasted carrots and broccoli for a perfect balance of savory and subtly sweet flavors, making it an ideal hearty yet light dinner.
INGREDIENTS
5 oz Pork Tenderloin
1 tsp Honey
1 tsp Reduced Sodium Soy Sauce
1 tsp Apple Cider Vinegar
1 clove Garlic
1/4 tsp Ground Ginger
1/2 tsp Olive Oil (for glaze)
1 medium Carrot
1/2 cup Broccoli
1/2 tsp Olive Oil (for vegetables)
PREPARATION
Preheat your oven to 400°F.
In a small bowl, whisk together honey, soy sauce, apple cider vinegar, minced garlic, ground ginger and olive oil to create the sticky glaze.
Pat the pork tenderloin dry and season lightly with salt and pepper if desired. Place it on a baking tray.
Brush the pork with half of the glaze, reserving the remaining glaze for later.
Roast the pork tenderloin in the preheated oven for about 20-25 minutes, or until its internal temperature reaches 145°F.
While the pork roasts, peel and cut the carrot into sticks and toss with 1/2 tsp olive oil. Lightly season as preferred and spread on a separate baking sheet along with broccoli florets.
Roast the vegetables in the oven for about 15 minutes until tender and slightly caramelized.
Once the pork is done, remove it from the oven and let it rest for a few minutes. Then, brush it with the reserved glaze for an extra sticky, savory-sweet finish.
Slice the pork tenderloin and serve alongside the roasted carrots and broccoli.
