INGREDIENTS
6 oz Salmon Fillet
1 cup Green Beans
1 cup Cauliflower
1 clove Garlic
1 tsp Olive Oil
Salt and Pepper (to taste)
PREPARATION
Pat the salmon fillet dry with a paper towel and season generously with salt and pepper.
Heat a non-stick skillet over medium-high heat. Once hot, add the salmon fillet skin-side down and sear for about 3-4 minutes until the skin is crispy, then flip and cook for an additional 2-3 minutes until the salmon reaches your desired doneness.
While the salmon is cooking, steam the green beans in a steamer basket over simmering water for about 5-6 minutes, until they are tender yet still crisp.
For the garlic cauliflower mash, chop the cauliflower into florets and place them in a small pot with a clove of garlic. Cover with water and bring to a simmer. Cook for about 8-10 minutes until the cauliflower is soft.
Drain the cauliflower and garlic, then transfer to a bowl. Add the olive oil, a pinch of salt and pepper, and mash until smooth with a fork or use an immersion blender for a creamier texture.
Plate the seared salmon alongside the steamed green beans and a generous scoop of garlic cauliflower mash. Serve immediately while warm.
