Savor a crisp, well-seared salmon filet served alongside vibrant steamed asparagus and a creamy cauliflower mash enhanced with a touch of Greek yogurt and olive oil. This meal brings together tender, flaky fish, crisp asparagus, and a smooth, subtly tangy mash for a dinner that’s both satisfying and nutritionally balanced.
INGREDIENTS
5 oz Salmon Filet
1 cup Asparagus
1 cup Cauliflower
1/3 cup Nonfat Greek Yogurt
1 tsp Olive Oil
Salt & Pepper to taste
1 tbsp Lemon Juice
PREPARATION
Pat the salmon dry and season both sides with salt and pepper.
Preheat a non-stick skillet over medium-high heat. Add the olive oil.
Sear the salmon filet skin-side down (if applicable) for about 4-5 minutes, then flip and cook for another 3-4 minutes until the fish is cooked through and lightly browned.
While the salmon cooks, steam the asparagus in a steamer basket over simmering water for about 4-5 minutes, until tender but still crisp.
Simultaneously, steam the cauliflower florets for about 8-10 minutes until very tender.
Once cooked, transfer the cauliflower to a bowl and mash it using a fork or immersion blender. Stir in the nonfat Greek yogurt and lemon juice, and season with salt and pepper to taste.
Plate the seared salmon with a side of steamed asparagus and a generous serving of cauliflower mash. Serve warm.
