4 oz Chicken Breast
100 g Small Potato
1.5 tsp Olive Oil
50 g Mixed Greens
1 tbsp Lemon Juice
1 clove Garlic

PREPARATION
Preheat your oven to 400°F (200°C).
In a small bowl, mix lemon juice, minced garlic, chopped fresh herbs, salt, pepper, and olive oil to form the marinade.
Place the chicken breast in a shallow dish and pour half of the marinade over it. Let it marinate for at least 15 minutes while you prepare the potatoes.
Toss the potato slices (or small diced potato if preferred) with the remaining marinade and a pinch of salt.
Arrange the marinated chicken and potatoes on a baking tray lined with parchment paper. Roast for about 20-25 minutes, or until the chicken is cooked through and the potatoes are crispy.
