Enjoy a delightful balance of crispy chicken breast paired with tender roasted sweet potatoes and a fresh bed of sautéed spinach. This dish offers a mix of textures and vibrant flavors, making it a wholesome choice for any meal of the day.
INGREDIENTS
5 oz Chicken Breast
1 medium Sweet Potato
2 cups Fresh Spinach
1 tbsp Olive Oil
1 tsp Paprika
1 tsp Garlic Powder
Salt & Pepper, to taste
PREPARATION
Preheat your oven to 425°F (220°C).
Brush the sweet potato with half of the olive oil, sprinkle with a pinch of salt and pepper, and place on a baking sheet. Roast for about 25-30 minutes or until tender.
While the sweet potato roasts, preheat a skillet on medium-high heat with the remaining olive oil.
Season the chicken breast with paprika, garlic powder, salt, and pepper. Place in the hot skillet and cook for about 5-6 minutes per side until the exterior is crispy and the internal temperature reaches 165°F (74°C).
In a separate pan or after removing the chicken, add the fresh spinach to the same skillet and sauté for 1-2 minutes until just wilted, seasoning lightly with salt and pepper.
Slice the chicken and serve it alongside the roasted sweet potato. Top with the sautéed spinach for a complete and balanced dish.
