Enjoy a vibrant, healthful dish featuring tender flaky salmon elevated with a bright lemon herb seasoning, paired with perfectly roasted broccoli and a quick sauté of fresh spinach for a delicious, nutrient-packed meal.
INGREDIENTS
6 ounce Salmon Fillet
1 cup Broccoli, chopped
2 cups Spinach, raw
1 tablespoon Extra Virgin Olive Oil
1 wedge Lemon
1 clove Garlic
1 teaspoon Dried Oregano
Salt & Black Pepper to taste
PREPARATION
Preheat your oven to 400°F. Line a baking sheet with parchment paper.
Place the broccoli on the baking sheet, drizzle with half the olive oil, season with salt and pepper, and roast for 15-18 minutes until tender and slightly crispy.
While the broccoli roasts, pat the salmon dry and place on a lightly greased baking dish. Drizzle with the remaining olive oil and squeeze lemon juice over the top.
Sprinkle the salmon with dried oregano, minced garlic (or finely chopped garlic clove), salt, and pepper.
Bake the salmon in the preheated oven for about 12-15 minutes or until it flakes easily with a fork.
In a skillet, heat a small splash of olive oil over medium heat. Add spinach and a pinch of salt, stirring until just wilted, about 2-3 minutes.
Plate the salmon with roasted broccoli on the side and top with the sautéed spinach. Garnish with an extra squeeze of lemon if desired.
