INGREDIENTS
8 oz Chicken Breast
1/2 cup Canned Green Chiles
1/4 cup Diced Tomatoes
1/4 medium Yellow Onion, diced
2 cloves Garlic, minced
1/2 cup Low-Sodium Chicken Broth
1 tsp Olive Oil
1 tsp Ground Cumin
Salt and Pepper to taste
PREPARATION
Heat the olive oil in a slow cooker over medium heat or, alternatively, sauté the minced garlic and diced onion in a pan until translucent before transferring to the slow cooker.
Place the chicken breast into the slow cooker. Add the canned green chiles, diced tomatoes, and sautéed onion and garlic.
Pour in the low-sodium chicken broth and sprinkle the ground cumin, salt, and pepper over the ingredients.
Cover and set the slow cooker to low, cooking for 6-8 hours until the chicken is tender and easily shreddable.
Once cooked, remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker to soak up the flavors for a few extra minutes.
Stir the mixture well and adjust the seasoning as needed before serving.
