300g Firm Tofu
1/2 cup Shelled Edamame (cooked)
1 cup Chopped Broccoli
1 medium Red Bell Pepper
1 medium Carrot
1/2 cup Sugar Snap Peas
1 tsp Sesame Oil
1 tbsp Low-Sodium Soy Sauce
1 tsp Rice Vinegar
1 tsp Sesame Seeds
1 clove Garlic
1 tsp Fresh Ginger, grated
PREPARATION
Press tofu for at least 20 minutes to remove excess moisture, then cut into bite-sized cubes.
In a bowl, toss tofu cubes with a little soy sauce and a light dusting of sesame seeds for extra crispiness.
Heat sesame oil in a non-stick pan or wok over medium-high heat. Add tofu cubes and stir-fry until all sides are golden and crisp. Remove tofu and set aside.
In the same pan, add minced garlic and grated ginger, sauté briefly until fragrant.
Add chopped broccoli, sliced red bell pepper, julienned carrot, and sugar snap peas. Stir-fry the vegetables for 3-4 minutes until they are tender-crisp.
