INGREDIENTS
6 oz Salmon Fillet
1 cup Green Beans
1.5 cups Cauliflower
1 tsp Olive Oil
2 cloves Garlic
1 Lemon wedge
Salt & Pepper to taste
PREPARATION
Pat the salmon dry and season both sides with salt and pepper.
Heat a skillet over medium-high heat. Add half of the olive oil and sear the salmon skin-side down for about 3-4 minutes until crispy, then flip and cook for another 3-4 minutes, until the inside is just opaque.
Meanwhile, steam the green beans until they are crisp-tender, about 4-5 minutes.
In a small pan, heat the remaining olive oil over medium heat and lightly sauté the garlic until fragrant. Toss the steamed green beans in the garlic oil for extra flavor.
For the cauliflower mash, steam the cauliflower until very tender (about 8-10 minutes). Transfer to a blender or food processor, add a pinch of salt, and blend until smooth and creamy. If needed, add a small splash of water to reach desired consistency.
Plate the seared salmon with a serving of garlic green beans on the side and a generous scoop of cauliflower mash. Squeeze a lemon wedge over the top and serve immediately.
