INGREDIENTS
8 oz Salmon Fillet (227g)
1 cup Green Beans (125g)
1 cup Cauliflower (107g)
1/4 cup Plain Greek Yogurt (60g)
1/2 tbsp Butter (7g)
1 Garlic clove (3g)
1 tbsp Lemon Juice (15g)
Salt & Pepper to taste
PREPARATION
Pat the salmon dry and season with salt, pepper, and a squeeze of lemon juice.
Heat a nonstick skillet over medium-high heat. Sear the salmon skin-side down for about 4-5 minutes, then flip and cook for an additional 3-4 minutes until the fish is just cooked through.
Bring a pot of water to boil and add a pinch of salt. Blanch the green beans for about 3 minutes until they are tender-crisp, then drain and set aside.
Meanwhile, steam the cauliflower florets until very tender, approximately 8-10 minutes.
Transfer steamed cauliflower to a bowl. Add the garlic (minced), Greek yogurt, and butter. Mash until smooth and creamy, seasoning with salt and pepper to taste.
Toss the blanched green beans lightly with a little salt, pepper, and a squeeze of lemon juice.
Plate the seared salmon alongside a serving of cauliflower mash and garlic green beans. Serve immediately.
