150g Sweet Potato
2 cups Fresh Spinach
2 tsp Olive Oil
1 Garlic Clove
PREPARATION
Preheat a non-stick skillet over medium-high heat and set aside a small pot for the sweet potato mash.
Peel and cut the sweet potato into cubes. Add them to a pot of boiling water and cook until tender, about 10-12 minutes.
While the potato cooks, season the salmon fillet lightly with salt and pepper.
In the skillet, heat 1 tsp of olive oil over medium-high heat. Add the salmon fillet skin-side down and cook for about 4 minutes, then flip and cook for another 3-4 minutes until the salmon is opaque and flakes easily.
