1 Cup Baby Spinach
1 Teaspoon Olive Oil
1 Clove Garlic
PREPARATION
Crack the large eggs into a bowl and add the egg whites. Whisk together until the mixture is smooth and slightly frothy.
Rinse the baby spinach and roughly chop the fresh herbs. Set aside.
Heat the olive oil in a nonstick skillet over medium heat. Add the minced garlic, and sauté for about 30 seconds until fragrant.
