INGREDIENTS
400g Extra-Firm Tofu
1 medium Red Bell Pepper
1 medium Zucchini
0.5 small Red Onion
1 tbsp Extra-Virgin Olive Oil
1 tbsp Fresh Rosemary
1 tbsp Fresh Thyme
2 cloves Garlic
Salt & Black Pepper to taste
PREPARATION
Press the tofu for at least 20 minutes to remove excess water, then slice into 1/2 inch thick steaks.
In a shallow dish, combine olive oil, chopped rosemary, thyme, minced garlic, salt, and pepper. Marinate the tofu steaks in this mixture for at least 15 minutes.
Preheat your oven to 400°F. Chop the red bell pepper, zucchini, and red onion into bite-sized pieces. Toss them lightly with a drizzle of olive oil, salt, and pepper.
Spread the vegetables on a baking sheet lined with parchment paper and roast for 20-25 minutes until tender and slightly charred around the edges, stirring halfway through.
While the vegetables roast, heat a non-stick skillet over medium-high heat. Sear the tofu steaks for 3-4 minutes on each side until a crispy, golden crust forms.
Plate the crispy tofu steaks alongside the roasted vegetables. Garnish with additional fresh herbs if desired and serve immediately.
