INGREDIENTS
6.5 oz Salmon Fillet
1 cup Green Beans
1 cup Cauliflower florets
1/4 cup Nonfat Greek Yogurt
2 tsp Olive Oil
1 tbsp Nutritional Yeast
1 clove Garlic (minced)
Salt & Pepper to taste
PREPARATION
Pat the salmon fillet dry and season both sides with salt and pepper.
Heat a non-stick skillet over medium-high heat. Add 1 tsp olive oil and let it warm up.
Place the salmon fillet in the skillet, skin-side down if applicable, and sear for about 3-4 minutes until a golden crust forms. Flip carefully and cook for another 3-4 minutes until the salmon is just cooked through.
Meanwhile, trim the ends of the green beans and steam them for about 5-6 minutes until tender-crisp.
Break the cauliflower into florets and steam them for 8-10 minutes until very tender.
Once the cauliflower is steamed, transfer it to a bowl, add the remaining 1 tsp olive oil, nonfat Greek yogurt, minced garlic, nutritional yeast, salt and pepper, and mash until smooth and creamy.
Plate the seared salmon alongside the steamed green beans and a generous serving of cauliflower mash. Enjoy while hot.
