Enjoy a vibrant dinner featuring a perfectly seared salmon fillet paired with crisp garlic green beans and a velvety sweet potato mash. The dish balances rich, tender salmon with fresh, garlicky crunch and a comforting, lightly seasoned mash for a satisfying clean-eating meal.
INGREDIENTS
7 oz Salmon Fillet
1 cup Green Beans
1 Garlic Clove
1.5 tsp Olive Oil
1 medium Sweet Potato
Salt & Pepper to taste
PREPARATION
Season the salmon fillet with salt and pepper.
Heat a non-stick skillet over medium-high heat and add half of the olive oil.
Sear the salmon for about 3-4 minutes per side until a golden crust forms and the interior reaches desired doneness. Remove and set aside.
In the same skillet, add the remaining olive oil. Sauté the minced garlic for about 30 seconds until fragrant.
Add the green beans and stir-fry for about 4-5 minutes until tender-crisp. Season lightly with salt and pepper.
Meanwhile, peel and cube the sweet potato. Boil in a small pot of water until tender, about 10-12 minutes.
Drain the sweet potato and mash with a fork, adding a pinch of salt for flavor.
Plate the sweet potato mash, top with the seared salmon, and arrange the garlic green beans on the side. Serve warm.
